Storage: Keep Peconic Oysters refrigerated at a temperature between 35°F and 40°F (1.5°C – 4.5°C). Store them in a breathable container such as a mesh bag or a shallow pan covered with a damp cloth to maintain moisture. Do not store oysters submerged in fresh water or in airtight containers, as this can kill them. For best freshness and quality, consume within 5 to 7 days of delivery while the oysters are still alive and shells are tightly closed.

Preparation: Before shucking, rinse oysters under cold running water to remove dirt and debris from the shells. Use a proper oyster knife and protective glove to carefully shuck oysters, keeping the liquor (natural juice) intact inside the shell.
